Firstly, the variety affects the product; the yellow variety, named Lyon, is selected. This variety is much more tender than the black variety which is thicker and has a greater protection of cells with specific layers, and therefore due to its durability is mainly grown to survive low temperatures. Another of the aspects which influences it is its slower development than the black varieties, and therefore the size of the stalk is much smaller, leading it to have a lower amount of fibrous surface. Finally, it is harvested in the first stage of growth, once the vegetable has developed at the moment of greatest tenderness, it has a larger leaf and smaller stalk. |
